Cheese Fondu - Fondu savoyard
Cheese Fondu
Ingredients
1 clove garlic, cut in half
2 1/2 cups dry white wine
1 tablespoon cornstarch
7 ounces Comte cheese, coarsely grated
7 ounces Emmental cheese
7 ounces Gruyere cheese, coarsely grated
1/16 teaspoon (pinch) ground nutmeg
1/16 teaspoon (pinch) ground black pepper
1/16 teaspoon (pinch) ground paprika
3 tablespoons Kirsch
Bite size cubes of bread
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Preparation:
Rub the inside of a saucepan with the cut side of the garlic and then discard the garlic. Add the wine and cornstarch to the prepared pan and bring it to a boil. Reduce the heat so that the wine is just simmering and add the cheese, nutmeg, black pepper, and paprika, stirring constantly, until the fondue is melted and smooth.
Keeping the heat low to medium, continue cooking - never boiling - the fondue for 15 minutes, until it has thickened. Add the Kirsch and stir constantly for 1 minute. Transfer the fondue to a fondue pot set over a flame. Serve it with the cubed bread.
Fondu Savoyard

3/5 litre de vin blanc sec
10 grammes de fécule de maïs
200 grammes de Comté, râpé grossièrement
200 grammes d’Emmental
200 grammes de Gruyère, râpé grossièrement
Une pincée de noix de muscade moulus
Une pincée de noix poivre noir moulu
Une pincée de paprika
45 millilitre de Kirsch
Cuisson: 25 minutes
Portions: 6
Procédure:
Frotter l'intérieur d'une casserole avec une gousse d'ail. Ajouter le vin et la fécule de maïs dans la casserole préparée et porter à ébullition. Réduire le feu pour que le vin soit juste frémissante et ajouter le fromage, le noix de muscade, le poivre noir et le paprika, en remuant constamment, jusqu'à ce que la fondue soit fondue et lisse.
Baisser le feu à moyen, continuer la cuisson - jamais bouillante - de la fondue pendant 15 minutes, jusqu'à ce qu'elle ait épaissi. Ajouter le kirsch et remuer constamment pendant 1 minute. Transférer la fondue à un caquelon à fondue chauffée. Servir avec du pain
