Mushroom spinach and gruyère crêpes - crêpes aux champignons, aux épinards et au gruyère
Ingredients:
2 tablespoons (30 g) unsalted butter
10 ounce (283 g) cremini or white mushrooms, trimmed and sliced
2 large cloves garlic, minced
1 teaspoon (5 g) finely chopped fresh thyme
Salt and pepper
2 tablespoons (30 mL) dry sherry
1 10-oz. (283 g) package frozen chopped spinach, thawed, squeezed dry
1 tablespoon (15 g) all-purpose flour
1 cup (240 mL) milk
Pinch of nutmeg
1/2 cup (120 g) shredded Gruyère (about 1 1/2 oz.)
4 9-inch (23 cm) crepes
Preparation
1. Preheat oven to 450ºF. Melt 1 Tbsp. butter in a large nonstick skillet over medium-high heat. Add mushrooms and cook, stirring often, until golden, about 8 minutes. Add garlic and thyme; sauté 1 minute longer. Season with salt and pepper. Add sherry; cook until almost evaporated, about 30 seconds. Stir in spinach. Remove from heat.
2. Melt remaining 1 Tbsp. butter in a small heavy saucepan over medium heat. Whisk in flour to form a paste and continue to cook, whisking, for 1 minute. Gradually add milk, whisking constantly, and bring to a simmer. Cook until sauce has slightly thickened, about 7 minutes. Remove from heat; season with salt, pepper and nutmeg. Whisk in half of Gruyère.
3. Stir 1/2 cup of sauce into mushroom mixture. Place 1 crepe on a work surface; arrange 1/4 of filling (a scant 1/3 cup) over half of crepe. Fold unfilled side over the filled side; fold in half again (it will look like a triangle). Repeat with remaining crepes and filling.
4. Coat a shallow 7-by-11-inch baking dish with cooking spray. Arrange crepes in baking dish, overlapping slightly. Cover crepes with remaining sauce. Sprinkle with remaining Gruyère. Bake on top rack until bubbling and golden, about 12 minutes. Let stand for 5 minutes before serving.

Préparation
- Préchauffer le four à 230ºC. Fondre 15g de beurre dans une grande poêle antiadhésive. Ajouter les champignons blancs et cuisinier, remuant jusqu'à ce que ce soit doré, 8 minutes. Ajouter l’ail et le thym; faire sauter pour 1 minute. Assaisonner avec le sel et le poivre. Ajouter le sherry sec; cuisinier jusqu'à presque évaporé, environ 30 secondes. Ajouter les épinards en remuant. Retirer du feu.
- Fondre 15ml de beurre dans une petite casserole lourde à feu moyen. Battre à fouet la farine pour former une pâte et continuer à cuisinier, fouettant pour une minute. Peu à peu ajouter le lait, fouettant constamment, et porter à ébullition. Cuisinier jusqu'à ce que la sauce ait épaissi légèrement, environ sept minutes. Retirer du feu; assaisonner avec le sel, le poivre et le noix de muscade. Ajouter la moitié du Gruyère en battant.
- Ajouter 120 ml de la sauce au mélange de champignons. Placer une crêpe sur la surface de travail; organiser ¼ de la garniture sur la moitié d'une crêpe. Plier la partie non garnie sur le côté rempli; plier en deux à nouveau de sorte qu'il ressemble à un triangle. Répéter l'opération avec les crêpes et la garniture restantes.
- Enrober un plat de cuisson de 18cm x 28cm avec l’aérosol de cuisson. Arranger les crêpes dans le plat de cuisson, chevauchés légèrement. Saupoudrer avec le Gruyère qui reste. Cuisinier au four sur la grille du haut jusqu'à bouillonnant et doré, environ 12 minutes. Laisser reposer pendant 5 minutes avant de servir.
